Ingredients
- 1 6-inch flour tortilla
- 1 egg
- 1 Tablespoon shredded Mexican cheese blend
- 1 Tablespoon salsa
Directions
Line a microwave-safe cereal bowl with a microwave-safe paper towel. Press the tortilla into the bowl. Break egg into center of tortilla. Beat egg gently with a fork until blended. Be careful not to tear the tortilla. Microwave on high for 30 seconds, stir. Microwave for 15-30 seconds more, until the egg is almost set.
Remove the tortilla with the paper towel liner from the bowl to a flat surface. Top the egg with cheese and salsa. Fold the bottom of the tortilla over the egg, and finally fold in the sides.
